Cesmach Mexico
Coffee from Chiapas, Mexico, has been sourced since the mid-2010s from cooperatives like Finca Triunfo Verde (FTV) and Campesinos Ecologicos de la Sierra Madre de Chiapas (CESMACH). These coffees have consistently high quality due to ideal conditions like heirloom varieties, great altitude, and passionate growers. The region benefits from a quality-control program to enhance varieties, fertilization, picking, processing, and lot selection. CESMACH, managed by Sixto Bonilla, has around 500 active members committed to producing better coffee. The farms are in the El Triunfo Biosphere Reserve, a rich, diverse forest area where coffee is shade-grown and typically processed as washed lots.
